- 73% ground beef: $237.16 (−$8.89, about 9¢/lb) on a very heavy 396,474 lb, more than five times Friday's volume.
- Pork (direction only): carcass cutout lower. Belly and picnic led the decline, ham slipped, and butt was unchanged. Combo hams (insides, outsides and knuckles) traded sharply lower.
- Volume: light Monday trade. Choice 49.89 loads (vs 103.34 Friday); total beef about 104 loads (vs about 135), with coarse product heavy at 39.08 loads (vs 11.22). Pork 241.71 loads (vs 273.44 Friday).
Holiday / seasonal buy note
Día de los Muertos (Nov 1–2) is under two weeks out, and Thanksgiving (Thu Nov 26) is about five and a half weeks away. Choice chuck roll eased about 15¢/lb on heavy trade and the Choice chuck primal slipped about 6¢/lb, a good spot to price braising and guisado programs, while pork butts were unchanged, so tamale-season butt coverage hasn't run up. For Thanksgiving, bone-in ribeye firmed about 5¢/lb and heavy tenderloin didn't trade enough today to read, so watch Tuesday's print before locking holiday rib and tenderloin roasts.
